Turkey troubles

So, somehow David and I agreed to be in charge of making the turkey for Thanksgiving this year. I pre-ordered a fresh turkey, went on Wednesday and picked it up, and put it in the fridge. That evening, we took it out to brine it... and discovered that "fresh" turkeys are still stored below freezing. Into the sink for a defrosting session!


David was discrete with this photo, having the candy bowl block the image of me sticking my hands into the cavity, trying to pull out frozen giblets.

The brining bag was so huge that the turkey wasn't covered. We were very clever, putting the turkey (and bag) into a box, so the brine covered more of the bird.

Thanksgiving morning.


We used these aromatics inside the turkey (carrot, celery, onion, apple, parsley, sage, rosemary, thyme) and a butter and herb rub on the outside.
